Alpage: Alpine Style
Aged for 6-8 months, and made from delicious Raw Farmstead milk, this Alpine style Cheese has the full bodied character one would expect of an older cheese with a natural, edible washed rind, and darker colored pate full of nut, caramel, and Umami flavor. The pate is smooth and firm through the center. Look for minor holes development and the formation of crunchy lactate crystals in the oldest wheels. Delicious flavor with broad appeal.

Named after the family’s dairy farm, this cheese is a classic, old world style Camembert (bloomy rind cheese), also made from whole milk. Yet firm through the center when young and ripened to provide a soft creamy pate that bends at room temperature. An exceptionally creamy cheese with dynamic flavors of Normandy, but produced right here in the Hudson Valley. Best paired with jammy preserves.

Our butter is fresh churned in small batches at our creamery. It is rich and creamy with 84-86% butterfat content. In addition to the salted and unsalted, our flavored butters are garlic and cinnamon. Our butter, churned in 40 gallon batches which produces a higher butter fat content and allows for very little moisture. It doesn't burn as quickly when cooking; chefs prefer it!
We have 2,800 NOFA-NY certified organic, free-range hens. Our hens have access to outdoor pasture and spacious indoor housing. We have raised most of our chickens since they were day old chicks and all of our hens have always lived their lives cage-free. Much of the feed the hens eat comes right from grain we produce on our farm.

Our rolled oats are raw oats. Post-harvest processing includes de-hulling, or taking the outer husk off of the oat kernel, and then rolling. Commercial rolled oats are steamed before rolling, increasing their shelf life. Because oats are a high-fat grain, both whole and rolled oats should be stored in the freezer for 2-3 month storage or the refrigerator for 1 month or less. Rolled oats chopped finely in a food processor produce an oat flour that is excellent as an addition to recipes because it is rich in dietary fiber, and very high in protein
At Ronnybrook, it has always been about our cows and milk. We take great pride in the ethical treatment of our entire herd and their health and nourishment. We never have and never will use growth hormones. Our cows are like family to us here. They are the offspring of a long line of prizewinning Holsteins that the Osofsky family has raised for nearly 70 years. The quality and flavor of our milk is the result of decades of love and labor. Our milk is pasteurized but not ultra pasteurized.
Non-Homogenized milk is better for you! The process began in earnest when dairy manufacturers stopped using glass bottles and switched to cardboard. Consumers could no longer see the cream line on the milk and when the cream flowed from the cardboard container, many consumers thought the milk was spoiled. Homogenization is a mechanical process which pulverizes the large butterfat globules and breaks them down to micron sized pieces. Many of our customers tell us that Ronnybrook milk is the only milk they can drink without suffering from digestion problems. We strongly believe that non-homogenized milk is simply better for you. It certainly tastes better.
Beyond the health benefits, non-homogenized milk lets the cream rise to the top, the old fashioned way all milk used to be. That’s why we call it Creamline™. You can spoon off a little cream for your coffee, or shake it up for a consistent whole milk.
Our milk is also tested daily by our state certified and licensed staff for antibiotics and other impurities to insure that all our products are as wholesome and healthful as possible. Here at Ronnybrook we do not believe in the use of growth hormones of any kind.
